Spiced Plum Chutney

Serves: Twelve | Prep: 10 min | Cook: 40 min

Ingredients:

Raspberry Coulis:
1 Tbsp vegetable oil
3 shallots, thinly sliced
1/2 tsp ground allspice
1/2 tsp ground ginger
2 lbs plums, stone removed, roughly chopped
1 bay leaf
1 cinnamon stick
4 whole cloves
3/4 cup light brown sugar
1 cup apple cider vinegar
1/4 cup freshly squeezed orange juice

Directions:
Heat oil in a large pot over low heat. Add shallots. Cook, 6-8 minutes, until soft, not brown. Stir in allspice and ground ginger, cook 1 minute.  Add plums, bay leaf, cinnamon stick, whole cloves, and sugar. Stir to combine. Pour in vinegar and juice. Stir. Bring to the boil, lower heat, simmer, 30-40 minutes, until thickened. Let cool before serving.
