Strawberry Mascarpone Cream Pie

Ingredients:

Crust:
1 1/2 cups graham crackers/digestive biscuits
1/4 cup sugar
6 Tbsp butter, melted

Strawberry:
2 cups fresh strawberries, hulled and sliced
1/8 cup sugar

Mascarpone Cream Pie:
2 cups heavy/double cream
2 cups mascarpone cheese, room temperature
1/4 cup powdered/icing sugar
1 Tbsp amaretto liqueur
1 tsp vanilla paste

Directions:
Grease the bottom and sides of a pie plate.

In a food processor, process the crackers/biscuits until fine crumbs. Add sugars and melted butter, mix,. Press mixture into the prepared pie plate. Refridgerate for at least 30 minutes.

Meanwhile, mis the fresh strawberries with sugar and let marinate for 30 minutes.

Make the filling by whisking cream, powdered sugar, amaretto, and vanilla together, just until the cream starts to hold. Whisk in the mascarpone cheese. Spread mixture on top of the chilled crust. Place marinated strawberries on top and keep chilled until ready to serve.
