Tequila Lime Chicken

Serves: Four | Prep: 3 hrs, 20 min | Cook: 10 min

Ingredients:

Tequila Lime Chicken:
1.5 lbs chicken breasts, skinless, boneless
1/2 cup tequila
1/2 cup freshly squeezed lime juice
1/2 cup freshly squeezed orange juice
1/4 cup olive oil
1 jalapeno pepper, seeded and minced
4 garlic cloves, minced
1/2 cup fresh cilantro, minced
2 tsp cumin
2 tsp paprika
2 tsp salt
1 tsp pepper

Directions:
Place chicken breast onto a cutting board, pound chicken with a meat mallet, until flattened about ¼ inch thick. Repeat with all remaining chicken.

In a bowl whisk tequila, lime juice, orange juice, oil, jalapeno, garlic, cilantro, cumin, paprika, salt, and pepper together. Reserve ½ cup of the marinade in a jar.

In a large casserole dish big enough to fit the chicken flat. Add chicken and top with remaining marinade, coating the chicken well. Cover and refrigerate for at least three hours, overnight works best.

Bring chicken to room temperature. Heat grill/barbecue, medium high heat. Remove chicken from marinade, discard marinade. Barbecue, 4-5 minutes per side. Place onto a platter, drizzle with the reserved marinade and enjoy.
