Turkey Teriyaki Rice Bowl
Serves: Four | Prep: 15 min | Cook: 20 min
Ingredients:
Turkey Teriyaki Rice Bowl:
1/2 cup soy sauce
2 Tbsp red wine vinegar
2 Tbsp light brown sugar
4 garlic cloves, minced, divided
2 tsp fresh ginger, grated
1 Tbsp sesame oil
5 scallions, thinly sliced lengthwise
1 chili, thinly sliced
1 lb ground turkey meat
1 cup broccoli florets, finely chopped
1/2 red bell pepper, thinly sliced
2 carrots, shredded
1 zucchini, shredded
4 cups cooked brown rice
1-2 Tbsp toasted seame seeds
Directions:
In a bowl whisk soy sauce, 1/4 cup warm water, red wine vinegar, brown sugar, half the minced garlic and ginger together.
In a large skillet over medium high heat, heat the sesame oil. Add scallions and chili, cook, 3-5 minutes. Add the ground turkey and remaining garlic, cook, until no longer pink. Add broccoli, peppers, carrots, zucchini and rice. Cook, 3 minutes, stirring occasionally. Pour over the soy sauce mixture and stir well. Cook, 2-3 minutes more.
Garnish with toasted sesame seeds, cut scallions and chilis.
