Turkey Vegetable Chili

Serves: Eight | Prep: 20 min | Cook: 30 min

Ingredients:

Turkey Vegetable Chili:
2 Tbsp olive oil, divided
1 lb ground turkey
1 zucchini, chopped
2 celery stalks, chopped
1 carrot, finely chopped
1 onion, chopped
1 bell pepper, chopped
8 oz mushrooms, chopped
3 garlic cloves, minced
1 jalapeno pepper, minced
1 Tbsp chili powder
1 tsp dried oregano
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp dried basil
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp salt
1/2 tsp pepper
2 Tbsp tomato paste
2 14 oz can chopped tomatoes
1 14 oz can red kidney beans, drained and rinsed
2 cups fresh spinach

Garnish:
Sour Cream
Shredded Cheddar Cheese
Thinly Sliced Scallions
Chopped Fresh Cilantro
Avocado

Directions:
Heat 1 Tbsp oil in a large pot over medium high heat. Add ground turkey and cook until brown, about 5 minutes. Once cooked remove from pot and set aside.

Add the remaining 1 Tbsp olive oil along with zucchini, carrot, celery, bell pepper, mushroom, onion, and jalapeno pepper. Sauté vegetables for 5-8 minutes, stirring occasionally until the onion is translucent and vegetables are close to tender. Add garlic, chili powder, oregano, paprika, cumin, basil, garlic and onion powders, salt, and pepper. Stir to coat and cook for 30-60 seconds. Return the turkey back to the pot along with the canned tomatoes, 1 cup water, kidney beans, and tomato paste. Stir to combine. Add spinach, pushing it down into the pot. Cover and let simmer for 15-20 minutes, until all vegetables are tender and the spinach wilts.

Garnish and serve with Rice.
