Yogurt Marinated Chicken
Serves: Four | Prep: 3 hrs, 10 min | Cook: 10 min
Ingredients:
Yogurt Marinated Chicken:
1.5 lbs chicken breasts, skinless, boneless
1/2 cup plain yogurt
1/4 cup olive oil
2 garlic cloves, minced
1 Tbsp freshly squeezed lemon juice
1 Tbsp fresh parsley, minced
1 Tbsp fresh mint, minced
1 tsp salt
1/2 tsp pepper
1/2 tsp cayenne pepper
Directions:
Place chicken breast onto a cutting board, pound chicken with a mallet, until flattened about ΒΌ-inch thick. Repeat with all remaining chicken.
In a bowl add yogurt, oil, garlic, lemon juice, parsley, mint, cayenne, salt, and pepper. Mix to combine.
In a large casserole dish, large enough to fit the chicken flat. Add half the marinade mixture to the bottom of the dish. Add chicken and top with the remaining marinade, coating the chicken well. Cover and refrigerate for at least three hours, overnight works best.
Bring chicken to room temperature. Heat grill/barbecue to medium high heat. Remove chicken from marinade, discard marinade. Grill/barbeque, 4-5 minutes on each side.
