Brown Bread & Squires Tea

Serves: 1 loaf | Prep: 15 min | Cook: 30 min

Ingredients:

Brown Bread:
2 cups whole meal flour
1/2 cup all-purpose flour
1/2 cup porridge oats
2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1 egg
1 Tbsp vegetable oil
1 Tbsp molasses/treacle

Squires Tea:
1 oz Cointreau (Orange Liqueur)
4 oz freshly steeped tea
freshly whipped cream

Garnish:
Orange zest

Directions:

Brown Bread:
Preheat oven 400F/200C. Line a baking tray with baking paper.

In a bowl mix flours, oats, salt and baking soda together.

In a jug whisk buttermilk, egg, oil and molasses together.

Add the wet ingredients to the dry ingredients. Mix all together with a wooden spoon, until combined, the mixture will be wet. Turn out onto a well-floured surface, with floured hands, work the dough into a round disk. Transfer dough onto the prepared tray and cut a cross over the top. Bake, 30-40 minutes, cool on a wire rack.

Squires Tea:
Fill a teacup with hot water, discard water. To the warmed teacup, add cointreau and tea. Top with the freshly whipped cream and garnish.
