Roasted Black Cherries Over Goat Chesse & Black Cherry Lime Cocktail

Ingredients:
Roasted Cherries Over Goat Cheese:
1 lb black cherries, pitted and halved
1 Tbsp olive oil
1 Tbsp brandy
1 Tbsp balsamic vinegar
1/4 tsp salt
1/4 tsp pepper
1 Tbsp fresh mint, finely chopped
1 Tbsp honey
6oz log goat cheese, room temperature
Black Cherry Lime Cocktail:
2 oz vodka
1 oz black cherry juice
1 oz freshly squeezed lime juice
4 oz sparkling water
Garnish:
Whole black cherries
Lime slice
Directions:
Roasted Black Cherries Over Goat Cheese:
Preheat oven 450F/230C. Line a baking tray with baking paper.
In a bowl mix cherries, oil, brandy, vinegar, salt, and pepper together. Spread the cherries evenly onto the prepared tray, roast, 12-15 minutes, turning halfway through. Remove from the oven, drizzle with honey and fresh mint, toss gently. Once cooled, place cherries on top of the goat cheese log. Garnish with fresh mint and serve with crackers.
Black Cherry Lime Cocktail:
In a glass filled with ice, add vodka, black cherry juice, and lime juice. Stir, top with sparkling water and garnish.
