Watermelon Pizza & Watermelon Punch

Ingredients:
Watermelon Pizza:
1 center cut slice of watermelon, 1-inch thick
1/4 cup kalamata olives, roughly chopped
1/4 cup feta cheese, crumbled
1 Tbsp fresh mint, finely chopped
balsamic glaze
Watermelon Punch:
2 oz white rum
2 oz watermelon puree
1 oz freshly squeezed lime juice
Garnish:
Watermelon wedge
Lime slice
Fresh mint
Directions:
Watermelon Pizza:
Place sliced watermelon onto a tray. Sprinkle with olives, feta, and mint. Drizzle balsamic glaze on top. Cut the watermelon into 6-8 wedges.

Watermelon Punch:
To make the watermelon puree, slice the watermelon in half, using a spoon, spoon watermelon flesh into a blender, discarding the rind. Blend the watermelon until blended, about 1 minute.
In a glass filled with ice add rum, watermelon puree, and lime juice. Stir and garnish.
The watermelon puree will last in the refrigerator, covered for 4 days. If it separates, just stir to combine.
