Baked Maple Pumpkin

Serves: Six | Prep: 10 min | Cook: 40 min

Ingredients:

Baked Maple Pumpkin:
3 lb small pumpkin
4 Tbsp maple syrup
2 Tbsp dark brown sugar
2 Tbsp butter
1 tsp pumpkin pie spice
1/2 tsp salt
1/4 tsp pepper

Directions:
Preheat oven 400F/200C. Line a baking tray with baking paper.

Cut pumpkin in half lengthwise, clean and remove seeds. Place cut side up. To each half add 2 Tbsp maple syrup, 1 Tbsp dark brown sugar, 1 Tbsp butter, 1/2 tsp pumpkin pie spice, 1/4 tsp salt, and 1/8 tsp pepper. Bake, 40-60 minutes, until the pumpkin is soft and the flesh pulls away easily from the skin.
