Balsamic Green Beans and Walnuts

Serves: Four | Prep: 10 min | Cook: 12 min

Balsamic Green Beans and Walnuts:

Ingredients:
1 lb green beans, trimmed
2 Tbsp butter
2 shallots, thinly sliced
4 garlic cloves, minced
1/4 cup balsamic vinegar
1 Tbsp honey
1/2 tsp salt
1/4 tsp pepper
1/4 cup walnuts, roughly chopped

Directions:
In a dry skillet over medium low heat add walnuts, toast, 2-3 minutes, stirring occasionally, until golden brown.

Blanch the string beans. Place beans in a pot of salted boiling water, cook 2-4 minutes. Immediately plunge into an ice bath to stop the cooking process. Once cooled, drain and set aside.

Melt butter in a skillet over medium high heat add shallots and cook, 2-3 minutes. Add garlic, cook, 30 seconds more. Stir in vinegar, honey, salt, and pepper. Bring to the boil, reduce heat, cook, 3-5 minutes, until thick. Stir in green beans and warm through. Transfer to a serving dish and top with toasted walnuts.
