Brown Sugar Baked Salmon

Serves: Six | Prep: 10 min | Cook: 25 min

Ingredients:

Brown Sugar Baked Salmon:
2 lbs side of salmon
1 tsp salt
1/2 tsp pepper
1/4 cup light brown sugar
2 Tbsp honey
4 garlic cloves, minced
2 tsp fresh ginger, grated
2 Tbsp soysauce
1 Tbsp freshly squeezed lemon juice
1 tsp sesame oil
1/2 tsp red pepper flake
1/4 cup fresh parsley, chopped
2 scallions, thinly sliced
1 Tbsp sesame seeds
1 lemon, cut into wedges

Directions:
Take the salmon out of the refrigerator 20 minutes before cooking.

Preheat oven 375F/190C. On a baking tray, lay out a piece of heavy duty aluminum foil or double up the foil, large enopugh to wrap the salmon. Transfer salmon onto the foil, skin side down. Sprinkle with salt and pepper.

In a bowl whisk brown sugar, honey, garlic, ginger, sesame oil, lemon juice, soy sauce, and red pepper flake together. Pour mixture over the salmon. Roll up the sides of the foil and secure the ends. Place the sealed salmon in the oven. Bake, 18-20 minutes. Uncover the salmon, by removing the foil and baste with sauce that is around the salmon. Place the oven on broil/grill and cook, 5-8 minutes more, until the edges get browned and caramelized.

Sprinkle with parsley, scallions, sesame seeds and serve with lemon wedges.
