Chargrilled Corn with Garlic Feta Butter

Serves: Six | Prep: 5 min | Cook: 10 min

Ingredients:

Chargrilled Corn:
6 whole corn on the cob
1 1/2 Tbsp olive oil

Garlic Feta Butter:
1/4 cup butter, room temperature
1 garlic clove, pressed
1/2 tsp salt
1/4 tsp pepper
1/4 tsp red pepper flake
1/2 cup feta cheese, crumbled
2 tsp fresh parsley, chopped

Directions:
Preheat barbecue to high.

Peel husk off corn.

Rub corn with olive oil, coating all sides. Place on to the preheated barbecue. Cook, turning often, until charred all over, 10-12 minutes.

Make the garlic feta butter by mixing butter, garlic, salt, pepper, and red pepper flake together in a bowl. Fold in feta and parsley. Place butter on top of the warm chargrilled corn.
