Foil Wrapped Grilled Parmesan Zucchini

Serves: Four | Prep: 5 min | Cook: 10 min

Ingredients:

Foil Wrapped Grilled Parmesan Zucchini:
2 medium zucchinis
2 Tbsp olive oil, divided
2 Tbsp butter, divided
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp pepper
4 Tbsp parmesan cheese, shredded

Directions:
Preheat barbecue to medium high heat.

Cut the ends off the zucchinis, cut both zucchinis in half, lengthwise. Place each half onto their own sheet of aluminum foil. Drizzle each half with olive oil, top with butter and sprinkle with garlic powder, pepper and paprika. Top with parmesan cheese. Wrap each half securely in foil. Place onto the barbecue, close lid, cook, 10-12 minutes. Let cool slightly before unwrapping.
