Fried Corn Cakes

Serves: Eight | Prep: 20 min | Cook: 10 min

Ingredients:

Fried Corn Cakes:
2 cups cornmeal/polenta
1 tsp baking powder
1 tsp salt
2 eggs
1 1/2 cups buttermilk
1/4 cup butter, melted
1 cup frozen corn, thawed
vegetable oil
Honey Butter

Directions:
In a bowl stir cornmeal, baking powder, and salt together.

In another bowl whisk eggs, buttermilk, and butter together. Stir dry ingredients into the wet. Stir in corn. Let rest, 10 minutes.

Heat a thin layer of oil in a skillet over medium high heat. Place a large spoonful of batter into the hot skillet. Cook, 3-4 minutes on each side. Repeat with the remaining batter, adding more oil as needed.

Spread honey butter over the warm fried corn cakes.
