Herb Bread Stuffing

Ingredients:
Herb Bread Stuffing:
1 baguette, cut into 1-inch cubes
4 Tbsp butter
1 onion, chopped
3 celery stalks, chopped
4 garlic cloves, minced
1 1/2 Tbsp fresh sage, chopped
1 Tbsp fresh thyme, chopped
1/2 tsp salt
1/4 tsp pepper
2 cups vegetable stock
2 eggs, beaten
Directions:
Preheat oven 375F/190C.
Place cubed bread onto a baking tray. Bake, 5-7 minutes, until bread toast slightly.
Butter grease a 9X13-inch casserole dish.
Melt butter in a skillet over medium heat. Add onion and celery, cook, stirring occasionally, 8-10 minutes, until soft. Add garlic, sage, thyme, salt, and pepper. Cook, 1-2 minutes, remove from heat.
In a large bowl gently stir toasted bread, onion mixture, stock, and eggs together. Transfer to prepared casserole dish, spread out in an even layer. Cover with foil. Bake, 25 minutes. Uncover, bake for 15-20 minutes more, until golden brown.
**Cover with foil and can be refrigerated for up to 24 hours.
**Tip: instead of toasting bread just leave cubed bread on a baking tray overnight, uncovered.
