Herbed Hasselback Potatoes

Serves: Four | Prep: 10 min | Cook: 1 hr, 20 min

Ingredients:

Herbed Hasselback Potatoes:
4 large baking potatoes
3 Tbsp olive oil
4 Tbsp butter, melted, divided
2 tsp salt
1 tsp pepper
3 Tbsp mixed fresh herbs; rosemary, thyme, chives, parsley
coarse salt

Directions:
Preheat oven 375F/190C. Line a baking tray with baking paper.

Cut ΒΌ inch slits into each potato, not cutting through, making sure to leave the bottom intact.

In a bowl mix 3 tablespoons melted butter, and oil together, using a spoon pour half of the mixture over the four potatoes. Season with salt and pepper. Bake, 30 minutes, layers should start to separate, using a spoon pour the remaining oil, butter mixture over the potatoes, trying to get the mixture between each slice. Bake, another 40 minutes.

In a bowl mix together panko, fresh herbs and the remaining 1 tablespoon of melted butter. Spoon mixture evenly onto each potato. Bake, 10 minutes.

Transfer potatoes on a serving dish and drizzle the butter and oil from the baking sheet onto each potato. Sprinkle some coarse salt onto and serve immediately.
