Honey Roasted Parsnips

Serves: Four | Prep: 10 min | Cook: 20 min

Ingredients:

Honey Roasted Parsnips:
2 lbs parsnips, peel, trim and cut into long pieces lengthwise
2 Tbsp olive oil
1 tsp salt
1/2 tsp pepper
2 Tbsp honey
1 Tbsp fresh thyme, minced
Coarse salt

Directions:
Preheat oven 400F/200C. Line a baking tray with baking paper.

Coat parsnips with oil, salt, and pepper. Transfer to the prepared tray. Roast, 20-25 minutes, stirring once halfway through cooking, until lightly golden. Drizzle with honey and roast for an additional 5-7 minutes, until golden brown. Garnish with fresh thyme and coarse salt before serving.
