Lemon Sauteed Green Beans

Lemon Sauteed Green Beans:

Ingredients:
1 lb green beans, trimmed
2 Tbsp olive oil
2 garlic cloves, minced
1 tsp lemon zest
1 Tbsp pine nuts
1/2 tsp salt
1/4 tsp pepper

Directions:
In a dry skillet over medium low heat add pine nuts, toast, 2-3 minutes, stirring occasionally, until golden brown.

Blanch the string beans. Place beans in a pot of salted boiling water, cook 2-4 minutes. Immediately plunge into an ice bath to stop the cooking process. Once cooled, drain and set aside.

In a skillet over medium high heat add olive oil and garlic. Sauté for 1 minute, add green beans, salt and pepper, toss well and heat through.

Transfer to a serving dish, top with lemon zest and toasted pine nuts.
