Maple Roasted Brussels Sprouts with Fresh Cranberries

Serves: Six | Prep: 20 min | Cook: 20 min

Ingredients:

Maple Roasted Brussels Sprouts with Fresh Cranberries:
1 1/2lbs brussels sprouts, trimmed and halved
2 Tbsp olive oil
1 Tbsp fresh thyme, minced
1 tsp salt
1/2 tsp pepper
1/2 cup fresh cranberries
2 Tbsp maple syrup

Directions:
Preheat oven 400F/200C. Line a baking tray with baking paper.

Place sprouts to the prepared tray. Coat with oil, thyme, salt, and pepper. Roast, 10 minutes. Add cranberries. Stir and roast for 5 minutes more. Drizzle with maple syrup. Stir and roast for another 5 minutes and serve warm.
