Mint Lemon Peas

Serves: Four | Prep: 5 min | Cook: 8 min

Ingredients:

Mint Lemon Peas:
1 Tbsp olive oil
5 scallions, thinly sliced
1 lb frozen peas, thawed and drained
1/2 tsp salt
1/4 tsp pepper
1/4 cup fresh mint, chopped
1 tsp lemon zest
1 Tbsp butter
1/2 Tbsp freshly squeezed lemon juice

Directions:
Heat oil in a large skillet over medium high heat.  Add scallions, cook, stirring occasionally, until tender, 2 minutes. Add thawed peas, salt, and pepper. Cook, stirring frequently, about 5 minutes, until peas are heated through. Gently stir in mint, lemon zest, and butter. Cook, 1 minute, until the butter melts. Squeeze lemon juice over the peas and serve hot.
