Oven Baked Parmesan Chicken Tenders with Honey Mustard Dip

Ingredients:
Oven Baked Chicken Tenders:
1.5 lbs chicken breasts, boneless, skinless
1 1/2 cups panko breadcrumbs
1/2 cup mayonnaise
1 egg
1/2 cup parmesan cheese, grated
1/2 tsp salt
1/2 tsp pepper
Honey Mustard Dip:
1/2 cup mayonnaise
2 Tbsp honey
1 tsp dijon mustard
3 tsp yellow mustard
2 tsp barbecue sauce
1/2 tsp garlic powder
1/2 tsp paprika
Directions:
Preheat oven 400F/200C. Place a wired baking rack on top of a baking tray and spray rack with oil.
Place panko on a baking sheet, spread out in an even layer. Bake, 4 minutes, until toasted. Let cool slightly, then add parmesan cheese. Mix.
Cut chicken into large strips, place in a bowl, season with salt and pepper. In another bowl whisk egg and mayonnaise together. Stir and coat chicken with mayonnaise mixture. Take one piece of chicken at a time from the mixture and roll into the panko mixture, until completely coated. Transfer to the prepared baking rack. Spray chcicken with oil. Bake, 15-20 minutes, until chicken temperature reaches 165F/74C.
Make the honey mustard dip. In a bowl add mayonnaise, honey, mustards, barbecue sauce, garlic powder, and paprika together.
