Parmesan Smashed Potatoes

Serves: Four | Prep: 10 min | Cook: 35 min

Ingredients:

Parmesan Smashed Potatoes:
1 1/2 lbs baby potatoes
2 Tbsp olive oil
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 Tbsp fresh chives, minced
2 Tbsp parmesan cheese, grated

Directions:
Preheat oven 450F/230C. Line a baking tray with baking paper.

Place potatoes in a lareg pot. Cover with cold water and add 2 Tbsp of salt. Turn heat on high, bring to the boil. Reduce heat a little to keep it from boiling over. Continue boiling, 15-20 minutes, until tender. Drain potatoes.

Place drained potatoes onto the prepared baking tray. Using a potato masher, carefully smash the potatoes until flattened but still in one piece. Drizzle with olive oil, salt, pepper, and garlic powder. Bake, 18-20 minutes, until golden brown and crisp. Transfer to a serving dish. Sprinkle with chives and parmesan cheese.
