Pecan Pie

Ingredients:
Dough:
1 1/4 cups all-purpose flour
1/4 tsp salt
1/2 cup cold butter, cubed
1/4 cup cold water
Pecan Pie:
2 eggs
1/2 cup sugar
1/2 cup light brown sugar
1/2 cup butter, melted
1 Tbsp all-purpose flour
1 Tbsp milk
2 tsp vanilla extract
1/2 cup chopped pecans
1/2-1 cup whole pecans
Directions:
Dough:
Preheat oven 350F/180C.
In a food processor add flour and salt, blitz to combine. Add butter, pulse until the mixture comes together and resembles crumbs. With the motor running slowly add the cold water, until the dough comes together and forms a ball. Turn dough out onto a well-floured surface, roll out to fit your pie dish.
In a bowl whisk eggs, until foamy. Whisk in butter and sugars. Add milk and vanilla and whisk to combine. Stir in chopped pecans. Pour mixture into the prepared pie shell. Top with whole pecans. Cover with foil and bake for 30 minutes. Remove foil and bake for another 20 minutes more, until the edges are golden brown The filling will be bit wobble in the center when shaken. Make sure to let cool completely before slicing.
