Pub Style Hot Chicken Wings with Blue Cheese Dressing

Ingredients:
Pub Style Hot Chicken Wings:
2 lbs chicken wings
1 cup flour
1 Tbsp cornstarch/corn flour
1 cup Franks red hot sauce
1/2 cup butter
1 tsp worcestershire sauce
1/8 cup sherry
1 tsp celery salt
1 tsp sugar
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp pepper
Blue Cheese Dressing:
1/3 cup blue cheese
1/4 cup mayonnaise
1/4 cup sour cream
1 Tbsp freshly squeezed lemon juice
1/2 Tbsp fresh parsley, finely chopped

Directions:
Preheat fryer 375F/190C.
In a saucepan over medium low heat add hot sauce, butter, worcestershire, sherry, celery salt, sugar, garlic, onion powder, salt and pepper. Simmer and whisk, 10-15 minutes.
In a bowl mix flour and cornstarch together, coat wings well. Place onto a wired rack and fry wings in batches, 7-9 minutes. Add cooked wings to a large bowl, add sauce, stir, coat wings with sauce.
In a bowl add blue cheese and lightly mash with a fork. Add mayo, sour cream, lemon juice, parsley, salt and pepper. Stir until combined. Add a splash of buttermilk, a little at a time to get the desired consistency. Dip the wings in the dressing and enjoy.
