Roasted Garlic Spinach Au Gratin

Serves: Six | Prep: 10 min | Cook: 1 hr, 10 min

Ingredients:

Roasted Garlic Spinach Au Gratin:
1 head of garlic, Roasted Garlic
olive oil
3 Tbsp butter
2 shallots, chopped
1/4 tsp pepper
1/4 tsp nutmeg
2 Tbsp flour
1 1/2 cups full fat milk
5 10 oz boxes/1450g frozen spinach, thawed
1/4 cup parmesan cheese, grated
1/2 cup gruyere cheese, shredded
1 cup mozzarella cheese, shredded

Directions:
Preheat oven 400F/200C. Grease an 11X8 inch dish with 1 Tablespoon butter.

Roast the garlic by slicing off the top of the garlic, place into a foil pouch or dish, drizzle with olive oil. Wrap in foil or add lid. Roast until golden and soft, about 40 minutes.

Squeeze the thawed spinach to remove any excess moisture.

In a skillet over medium high heat melt the remaining 2 Tablespoon butter. Add shallots, cook 3-5 minutes, until soft. Add pepper, nutmeg and flour, cook, stirring continuously for 1 minute. Slowly pour in the milk, stirring continuously with a wooden spoon for 3-5 minutes. The sauce is done when you can trace a line across the back of the spoon and the line remains visible. Add spinach, roasted garlic and parmesan cheese. Stir until completely incorporated. Transfer spinach mixture to the prepared dish. Sprinkle the gruyere and mozzarella evenly on the top. Bake, 20-25 minutes, until cheese is bubbly and golden.
