Salted Fried Potatoes

Serves: Four | Prep: 10 min | Cook: 25 min

Ingredients:

Salted Fried Potatoes:
2 lb baby potatoes
2 Tbsp plus 1/2 tsp salt, divided
2 Tbsp olive oil
2 Tbsp butter
1/2 tsp garlic powder
1/2 tsp pepper
3 Tbsp mixed fresh herbs; rosemary, thyme, chives, parsley
coarse salt

Directions:
Place potatoes in a pot, cover with cold water, add 2 Tbsp salt. Turn on high heat, bring to the boil, reduce heat slightly to keep from boiling over. Cook, 10-12minutes, until potatoes can be easily pierced with a knife, but slightly firm. Drain and let cool. Cut potatoes in half.

Melt butter and oil in a skillet over medium high heat. Add cooked potatoes, garlic powder, pepper and ½ tsp salt. Cook, 12-15 minutes, stirring occasionally, until crisp. Take off the heat, add fresh herbs and season with coarse salt.
