Sausage Potato Egg Bake

Ingredients:

Sausage Potato Egg Bake:
1 lb potatoes, peeled and cubed small
1 lb sausage meat, casing removed
1 onion, finely chopped
1 garlic clove, minced
1 jar roasted red peppers, drained and roughly chopped
2 cups fresh spinach, roughly chopped
12 eggs
1 cup milk
1/2 cup double/heavy cream
1 tsp salt
1/2 tsp pepper
1 cup cheddar cheese, shredded and divided
1 cup mozzarella cheese, shredded and divided

Directions:
Preheat oven 375F/190C. Butter grease a 9X13-inch casserole dish.

Add cubed potatoes to a pot, top with cold water. Add salt and cook over high heat, 5-7 minutes, until potatoes are fork tender. Drain.

Cook sausage in a skillet over medium high heat, 6-8 minutes, until cooked and browned. Add onion, cook, 3-5 minutes. Add garlic, cook, 1 more minute. Stir in peppers, spinach, and cooked potatoes, just until heated through and spinach has wilted. Remove from heat and let cool slightly.

Add eggs to the buttered casserole dish along with milk, cream, salt, and pepper. Whisk, until combined. Stir in sausage mixture along with 1/2 cup cheddar cheese and 1/2 cup mozzarella cheese. Sprinkle the top with the remaining 1/2 cup cheddar and mozzarella cheese. Bake, 30-35 minutes, until the sides are golden and cheese melts.

Can be put together 24 hours before baking.
