Sweet n’ Sour Pork Meatballs with Pineapple

Serves: Four | Prep: 20 min | Cook: 25 min

Ingredients:

Meatballs:
1.5 lb ground pork
1 egg
1/2 cup dried breacrumbs
1 tsp onion powder
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp ground ginger
1/2 tsp red pepper flake

Sauce with Pineapple:
3 Tbsp olive oil, divided
1 cup beef stock
1/4 cup dark brown sugar
1/4 cup rice vinegar
2 Tbsp soy sauce
1 Tbsp cornstarch
2 tsp worcestershire sauce
1 large red onion, cut into chunks
1 red bell pepper, cut into chunks
1 1/2 cup fresh pineapple, cut into chunks
2 scallions, thinly sliced
Fresh cilantro

Directions:

In a bowl add pork, egg, breadcrumbs, onion powder, salt, pepper, garlic powder, ground ginger, and red pepper flake. Mix well with your hands and roll into 12-15 equally sized meatballs.

In a bowl whisk stock, brown sugar, rice vinegar, soy sauce, cornstarch, and worcestershire sauce together, until all combined, no lumps.

Heat oil in a large skillet over medium high heat. Add meatballs and cook, 6-8 minutes, until all sides are golden. Remove from skillet and set aside.

Drain excess oil, leaving 1 tablespoon of the drippings in the skillet. Add onion and bell pepper. Cook, 2-3 minutes, until lightly browned in spots. Add pineapple. Cook and stir for 1-2 minutes more. Stir in the stock mixture and return the meatballs to the skillet. Decrease heat and simmer, stirring occasionally for 8-10 minutes, until meatballs are cooked through.

Serve over rice and garnish with scallions and fresh cilantro.
