Vegetable Turkey Pita Sandwich

Ingredients:
Vegetable Turkey Pita Sandwich:
1 lb ground turkey
1 zucchini, grated (about 1 cup)
1 cup fresh spinach, finely chopped
1/4 cup red onion, finely diced
3 garlic cloves, minced
2 Tbsp olive oil
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp pepper
6 pita breads
Toppings:
Shredded Carrots
Shredded Cabbage
Sliced Cucumbers
Sliced Red Onion
Tzatziki
Directions:
Preheat oven 350F/180C. Line two baking trays with baking paper.
In a bowl add turkey, zucchini, spinach, onion, garlic, oil, dried oregano, thyme, salt, and pepper together. Roll into balls. Flatten slightly before placing on to the prepared baking tray. Bake, 15-18 minutes, until internal temperature 165F/74C. Place pita bread onto the remaining lined tray, place into the preheat oven, 8-10 minutes to warm through.
Assemble by placing the flatten turkey balls into warm pitas and adding your favorite toppings.
