Apple Crumble Bars & Apple Cider Champagne Cocktail

Ingredients:
Apple Crumble Bars:
Base:
2 1/2 cups all-purpose flour
1 cup butter, room temperature
1/2 cup sugar
1 tsp vanilla extract
1/4 tsp salt
Apple Filling:
3-4 large apples, peeled and thinly sliced
1 Tbsp butter
2 Tbsp light brown sugar
1/2 tsp cinnamon
Crumble Topping:
1/2 cup butter, room temperature
1/2 cup oats
1/2 cup light brown sugar
1/2 cup flour
1/2 tsp cinnamon
1/4 tsp nutmeg
Apple Cider Champagne Cocktail:
Caramel Sauce
1 oz brandy
1 oz Homemade Apple Cider
4 oz prosecco, chilled
Garnish:
Small apple
Edible gold glitter
Directions:
Apple Crumble Bars:
Line a 13X9-inch baking pan with baking paper, making sure it hangs over the side of the pan.
In a mixing bowl cream butter and sugar together. Add vanilla, salt and sifted flour mix until crumbled and dough starts to come together. If the dough is too dry add one tablespoon water. Pour out into the prepared pan and flatten out, evenly. Place in the refigerator, 30 minutes.
Preheat oven 350F/180C. Bake base, 15 minutes, until lightly browned.
For the filling melt butter and sugar in a skillet over medium heat. Add apples and cinnamon, cook 5-8 minutes, stirring occasionally until the apples are soft. Place in an even layer on top of the cooked base.
Make the crumble topping. In a bowl mix butter, sugar, oats, flour, cinnamon, and nutmeg together. Place mixture evenly over the apples. Bake, 20-25 minutes, until golden brown.
Apple Cider Champagne Cocktail:
Rim a glass with caramel sauce. Add brandy, cider, and top with prosecco. Garnish by sprinkling the rim with the edible gold glitter and cutting a slice in the apple, to help it sit on the rim.
