Crab Meat Stuffed Mushrooms & Bourbon Orange Cocktail

Ingredients:

Crab Meat Stuffed Mushrooms:
20-24 button mushrooms
1 Tbsp olive oil
1/2 cup onion, finely chopped
1 garlic clove, finely minced
1/4 cup white wine
1/2 cup panko breadcrumbs
3 Tbsp parmesan cheese, grated
1 cup fresh lump crab meat
1/2 lemon, juice
1 Tbsp fresh parsley, finely chopped
1/4 tsp pepper
3 orange wedges

Bourbon Orange Cocktail:
2 oz bourbon
1 oz orange liquer
1 oz freshly squeezed orange juice
4 oz lemon lime soda

Garnish:
Orange slices

Directions:

Crab Meat Stuffed Mushrooms:
Preheat barbeque, medium high heat. Oven, 425F/220C.

Clean mushrooms, wipe with a paper towel, remove the stem and with a spoon go around the edge of the mushroom to make the cap larger, it will be easier for stuffing.

Heat oil and butter in a skillet over medium high heat. Add onions, cook until soft, 2-3 minutes. Add garlic, cook 30 seconds more. Add white wine, cook until reduced by half, 1-2 minutes. Take off the heat, stir in breadcrumbs, parmesan cheese, lemon juice, parsley and black pepper. Stuff the breadcrumb filling into the cleaned mushroom caps, place stuffed caps onto a tray or directly onto the barbeque, cook 8-10 minutes. Squeeze orange wedges over the mushroom and serve.

Bourbon Orange Cocktail:
In a glass filled with ice add bourbon, orange liquer, and orange juice. Stir. Top with soda and garnish.
