Roasted Garden Spread & Purple Punch

Ingredients:
Roasted Garden Spread:
1 eggplant, cubed
2 zucchinis, cubed
1 red bell pepper, cubed
1 red onion, cubed
1 hot pepper, minced
3 garlic cloves, minced
3 tbsp olive oil
2 tsp salt
1 tsp pepper
1 Tbsp tomato paste
Homemade Pita Chips
Purple Punch:
2oz vodka
1oz freshly squeezed lemon juice
1 oz freshly squeezed lime juice
1/2 oz blue curacao
1/2 oz grenadine
3oz sparkling water
Garnish:
Lime slices
Blackberries
Directions:
Roasted Garden Spread:
Preheat oven 450F/230C. Line a baking tray with baking paper.
Place cubed eggplant, zucchini, bell pepper, onion, hot pepper, and garlic onto the prepared baking tray. Drizzle with olive oil, salt, and pepper. Stir to coat. Cook for 30 minutes, stirring halfway through cooking.
Let cool for at least 10 minutes before placing into a food processor along with the tomato paste, process until creamy. Serve with crackers or homemade pita chips.
Store in the refrigerator for up to 3 days. Delicious cold or at room temperature. Also, great with eggs.
Purple Punch:
In a glass filled with ice add vodka, lemon juice, lime juice, blue curacao and grenadine. Stir to combine. Top with sparkling water and garnish.
