Strawberry Ricotta Bruschetta & Strawberry Daiquiri

Ingredients:
Strawberry Ricotta Bruschetta:
1 lb strawberries, finely chopped
1 Tbsp balsamic vinegar
1 tsp honey
1 cup ricotta cheese
1 Tbsp freshly squeezed lemon juice
1 Tbsp fresh basil, chopped
1 Tbsp fresh mint, chopped
freshly ground black pepper
Bruschetta
Strawberry Daiquiri:
1 cup frozen strawberries
1/2 cup fresh strawberries
2 oz freshly squeezed lime juice
4 oz light rum
1 oz peach schnapps
fresh cream
Garnish:
Strawberries
Lime wedges
Mint sprigs
Directions:
Strawberry Ricotta Bruschetta:
In a bowl add strawberries, balsamic vinegar, and honey. Stir and let sit for 5 minutes.
In another bowl mix ricotta cheese and lemon juice together.
Top each piece of Bruschetta with the ricotta cheese mixture, then marinaded strawberries, top with basil, mint and freshly ground pepper.
Strawberry Daiquiri:
In a blender add frozen and fresh strawberries, lime juice, rum, and peach schnapps, blend until smooth. Pour mixture into glasses. Drizzle with fresh cream and garnish.
