Tuna Tartare & Sunset Cocktail

Ingredients:

Tuna Tartare:
1 lb fresh sushi quality tuna, chopped
1 tsp lime zest
1 lime, juiced
1 Tbsp fresh chives, minced
1 Tbsp fresh parsley, minced
1/2 jalapeno, minced
1/2 cup cucumber, finely chopped
3-4 dashes hot sauce
2 tsp soy sauce
2 tsp sesame oil
1 tsp rice vinegar
1 avovado, chopped
1/2 Tbsp sesame seeds
Rice crackers

Sunset Cocktail:
2 oz coconut rum
1 oz vodka
1/2 oz peach schnapps
1/2 oz grenadine
4 oz pineapple juice

Garnish:
Maraschino cherries
Pineapple wedge

Directions:

Tuna Tartare:
Toast sesame seeds. Place seeds in a dry skillet over medium heat and cook until brown and smells nutty, 3-5 minutes, swirling the pan often.

In a bowl add tuna, lime zest, juice, chives, parsley, jalapeno, cucumber, hot sauce, vinegar, sesame oil, and soy sauce. Mix well. Carefully fold in the avocado.

Garnish with fresh chives and sesame seeds and serve with rice crackers.

Sunset Cocktail:
In a glass filled with ice add rum, vodka, peach schnapps, and grenadine. Slowly pour the pineapple juice on top. Garnish and watch the sunset!
