Apple Brie Stuffed Pork Chops in a Maple Sauce

Ingredients:
Apple Brie Stuffed Pork Chops in a Maple Sauce:
4 pork chops, 1 1/2-inch thick
2 1/2 tsp salt, divided
1 1/2 tsp pepper, divided
2 Tbsp olive oil
2 Tbsp dijon mustard
2 tsp fresh thyme, minced
1 Tbsp butter
1 onion, thinly sliced
2 apples, cored and thinly sliced
4 oz brie cheese, sliced
2 Tbsp apple cider vinegar
2 Tbsp maple syrup
Directions:
Preheat oven 375F/190C.
In a bowl mix mustard, fresh thyme, ½ tsp salt, and ¼ tsp pepper together.
Cut a 2-inch slit deep and wide into the fatter side of the pork chops. Start with the knife in the center, wiggle back and forth to create a pocket. Season outside of pork chops with the remaining salt and pepper. Spread mustard mixture into each pocket.
Heat oil in a large oven proof skillet over high heat. Sear pork chops, 2-3 minutes, each side. Remove, set aside to cool slightly.
Turn down heat to medium low. Add butter and onions, cook, 2-3 minutes, until soft. Add apples, cook, 2-3 minutes more, until just tender, stirring occasionally. Add garlic and cook 1 minute more. Remove from heat.
Fill each pocket of the pork chops with 2 slices of brie cheese, a spoonful of onion and apple mixture.
To the remaining onions and apples in the skillet stir in apple cider vinegar and maple syrup. Arrange the remaining apple and onions in the middle of the skillet. Place the stuffed pork chops on top. Bake, 15-20 minutes, until an internal temp of 145F. Remove from oven and let rest, 5–10 minutes.
