Apple Doughnuts with Maple Syrup Brown Butter Glaze

Ingredients:
Apple Doughnuts:
2 cups all-purpose flour
1/2 cup light brown sugar
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
2 eggs
3/4 cup buttermilk
2 Tbsp butter, melted
1 apple, finely chopped
Maple Syrup Brown Butter Glaze:
1/2 cup butter
3 Tbsp maple syrup
1 1/2 cup powdered/icing sugar
2 Tbsp milk
Directions:
Preheat oven 425F/220C. Spray a doughnut pan with cooking spray.
In a large bowl sift in flour. Add sugar, baking powder, nutmeg, cinnamon, and salt. Stir to combine.
In a jug whisk buttermilk, eggs, and butter together. Stir the wet mixture into the dry ingredients, just until combined. Fold in the apples. Fill each doughnut hole about 2/3 full. Bake, 7-9 minutes, until golden and the top of the doughnuts spring back when touched. Remove to a wire rack and let cool.
While cooling, make the glaze by melting butter in a saucepan over medium heat. Continue cooking and stirring occasionally for about 10 minutes, until golden brown. Remove from heat, whisk in sugar, maple syrup, and milk. Let cool slightly. Glaze the bottom of each doughnut and let the glaze set until hard.
** A muffin tin can be used. Just decrease oven temp to 350F/180C and bake 15-18 minutes, until a toothpick in the center of the muffin comes out clean.
