Mussels Alla Vodka
Serves: Four | Prep: 10 min | Cook: 25 min
Ingredients:
Mussels Alla Vodka:
2 lbs fresh mussels, cleaned and debearded
2 Tbsp olive oil
1 Tbsp butter
1 onion, finely chopped
4 garlic cloves, minced
1/2 tsp red pepper flake
1/2 cup vodka
2 Tbsp tomato paste
2 14oz cans chopped tomatoes
1 tsp salt
1/2 tsp pepper
1/2 cup heavy/double cream
1/4 cup parmesan cheese, grated
3 Tbsp fresh parsley, chopped
Directions:
In a saucepan with a lid heat butter and oil over medium high heat. Add onions and cook for 3-5 minutes, until soft. Add garlic and red pepper flake. Cook, 30-60 seconds more. Add vodka. Stir and reduce by half. Stir in tomato paste and cook for 1 minute more. Add canned tomatoes, salt, and pepper. Stir and bring to the boil . Reduce heat and simmer, 15-20 minutes, until thickened. Stir in cream and mussels. Cover and cook, 3-5 minutes, until the mussels open up. Discard any mussels that do not open. Remove from heat. Sprinkle and stir in parmesan cheese and fresh parsley.
Serve with crusty bread or turn into a dinner by stirring in cooked spaghetti, adding pasta water if needed to thin sauce.
