Ingredients:
Butter Tart Shell:
3/4 cup butter, room temperature
1/2 cup sugar
1/2 tsp vanilla extract
1 3/4 cups all-purpose flour
1/8 tsp salt
Directions:
In a mixing bowl with a paddle attachment cream butter and sugar together. Stir in vanilla. Sift in flour and salt and mix on low speed, until the dough starts to come together. Pour out onto a lightly floured work surface and shape into a disk.
With your hands spread dough into a fluted tart tin or tins. Place in the refrigerator and let cool for at least 1 hour, until firm.
Preheat oven 350F/180C.
Butter one side of the baking paper and place the buttered side down onto the cooled tart. Cover with baking beans and bake for 20 minutes. Remove beans and paper and prick the tart all over with a fork and bake for an additional 20-25 minutes, until lightly browned. Allow to cool completely before filling.
