Oven Baked Fish Fingers
Serves: Four | Prep: 15 min | Cook: 12 min
Ingredients:
Oven Baked Fish Fingers:
1 lb cod, 1-inch thick strips, skinless
1/2 tsp salt
1/2 tsp pepper
3/4 cup all-purpose flour
2 eggs, beaten
1 1/4 cup panko bread crumbs
1/4 parmesan cheese, grated
1 Tbsp Italian Seasoning
2 tsp lemon zest
Directions:
Preheat oven 450F/230C. Place a wired baking rack on top of a baking tray and spray rack with oil.
Pat fish strips dry with paper towel and sesaon all sides with salt and pepper.
Make stations. On a flat plate add flour, to a second plate add beaten eggs, and on a third plate mix panko, parmesan cheese, lemon zest, and Italian seasoning together. Dip fish into flour, then egg, then panko mixture, coat well. Place coated fish onto the greased rack and spray or brush with oil. Bake for 12-15 minutes.
Serve with fresh lemon wedges, Tartar Sauce, and Mushy Peas.
