Sweet Potato Bread with Brown Butter Maple Glaze

Serves: 1 loaf | Prep: 15 min | Cook: 1 hr, 30 min

Ingredients:

Sweet Potato Bread:
2 cups sweet potatoes, about 2 large
1 3/4 cups all-purpose flour
1/2 cup light brown sugar
1 tsp baking soda
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp salt
1/2 cup vegetable oil
1/3 cup water
2 eggs
1 tsp vanilla extract

Brown Butter Maple Glaze:
1/4 cup butter, cut into cubes
3/4 cup powdered/icing sugar
2 Tbsp maple syrup
1 Tbsp milk
1 tsp vanilla extract
1/8 tsp salt

Directions:
Preheat oven 425F/220C.

Use a fork to poke holes into the sweet potatoes, place in the oven. Bake, 40-50 minutes, until easily pierced with a fork. Let cool, scoop out flesh. With a potato masher, mash the sweet potato.

Alternatively, cook in the microwave as per microwave instructions.

Lower oven temperature 350F/180C. Line or grease a loaf tin.

In a bowl mix flour, sugar, baking soda, nutmeg, cinnamon, and salt together.

In another bowl add mashed sweet potato, oil, water, eggs, and vanilla. Mix. Add dry ingredients to wet and stir until combined. Bake, 50-60 minutes, until a toothpick inserted into the center of the loaf comes out clean.  Transfer to a wire rack and let cool.

 To make the glaze melt butter in a saucepan over medium heat. Continue to cook, stirring occasionally for 8-10 minutes, until butter turns golden brown. Remove from heat. Stir in powdered sugar, syrup, salt, vanilla, and milk, until smooth. Drizzle over the top of the cooled loaf and enjoy.

Bread can be frozen, just freeze before glazing.
