Ingredients:
Creamy Garlic Pork Chops and Cabbage:
2.5 lbs pork chops, boneless
1 tsp garlic powder
1 tsp onion powder
1 tsp pepper
1/2 tsp salt
1 cup pancetta, cubed
2 Tbsp olive oil
3 Tbsp butter, divided
1 onion, chopped
8 garlic cloves, sliced
1 1/2 cup chicken stock, divided
1-2 lbs green cabbage, shredded
1/2 cup heavy/double cream
1/4 cup cream cheese
1 tsp dijon mustard
Fresh parsley
Directions:
In a small bowl mix garlic powder, onion powder, salt, and pepper together. Use the mixture to season both sides of the pork chops.
Add pancetta to a cold skillet. Heat over medium high heat. Cook, until crispy. Drain and remove. Add 2 Tbsp oil and 2 Tbsp butter to the skillet. Let melt and add seasoned pork chops. Cook, 4-5 minutes on each side. Remove and cover to keep warm. Also, cook in batches if needed.
Add the remaining 1 Tbsp butter and onion. Stir and cook, until soft, 2-3 minutes. Add sliced garlic and 1 cup chicken stock. Stir, until the garlic soften and stock reduces, about 3-5 minutes. Add cabbage and remaining stock. Stir, lower heat and cover for 10-12 minutes, until wilted. Stir in cream, cream cheese, dijon mustard, and the cooked pancetta. Stir and cook, until warmed through. Top with cooked porkchops and garnish with fresh parsley.
