Crepes

Serves: Six | Prep: 35 min | Cook: 25 min

Ingredients:

Crepes:
1 1/2 cups milk
2 eggs
1 cup all-purpose flour
1 Tbsp sugar
1 tsp vanilla extract
1/4 tsp salt
3 Tbsp butter, melted

Directions:
In a blender add milk and eggs. Blend to mix. Add flour, sugar, vanilla, salt, and melted butter. Blend, until smooth. Let rest, 30 minutes. However, it can be placed in the refrigerator overnight.

Heat a 10-inch non-stick skillet over medium heat. Add a dollop of butter. Once butter melts pour about 1/4 cup of the batter into the skillet. Swirl to cover the skillets edges. Cook, 1-2 minutes, until the crepe looks dry on top and the edges start to brown. Flip and cook 30 seconds more. Remove from the skillet. Add more butter and repeat with the remaining batter, until all the batter has been used, adding more butter as needed.
