Oven Roasted Bourbon Sweet Potatoes

Oven Roasted Bourbon Sweet Potatoes:

Ingredients:
1 1/2lbs sweet potato, peeled and sliced into 1/2 inch rounds
1 Tbsp butter, plus more for greasing the pan
1/4 cup light brown sugar
1/2 tsp orange zest
1/4 cup freshly squeezed orange juice
1 Tbsp bourbon
1/4 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp salt
1/4 cup pecans, roughly chopped

Directions:
Preheat oven 400F/200C. Butter a baking dish.

In a saucepan over medium heat add butter,sugar, zest, juice, bourbon, cinnamon, nutmeg, and salt. Whisk to combine, bring to the boil, lower heat, simmer for 5 minutes, until the sauce has thickened slightly.

In another skillet over medium low heat add pecans. Cook, tossing the pan often for 5 minutes, until the nuts become fragrant and toasted.

Layer peeled and sliced potatoes in the prepared baking dish. Pour the thickened sauce over the potatoes and cover the dish with aluminum foil. Bake 30 minutes, potatoes should be soft at this stage. After 30 minutes remove foil, base potatoes and cook for another 15-20 minutes, baste again. Top with toasted pecans and serve warm.
