Pancetta Sauteed Cabbage
Serves: Four | Prep: 20 min | Cook: 20 min
Ingredients:
Pancetta Sauteed Cabbage:
1 Tbsp olive oil
1 cup pancetta, chopped
1 Tbsp butter
1 onion, chopped
2 garlic cloves, minced
6 cups savoy cabbage, shredded
1/2 cup chicken stock
1/2 tsp salt
1/4 tsp pepper
Directions:
Heat oil in a large pot over medium high heat. Add pancetta, cook 5-7 minutes, until brown and crisp. Remove with a slotted spoon and drain on a paper towel lined plate.
Add butter and onion, cook 3-5 minutes, until soft. Add garlic and cook, 30 seconds more. Lower heat, return pancetta. Add cabbage, stock, salt and pepper. Cover and cook, 10-12 minutes, until wilted.
