Pumpkin Butter
Serves: Makes 3 cups | Prep: 5 min | Cook: 30 min
Ingredients:
Pumpkin Butter:
3 1/2 cups Pumpkin Puree
3/4 cup Apple Cider
1/2 cup light brown sugar
1/4 cup maple syrup
2 tsp vanilla extract
1 Tbsp Pumpkin Pie Spice
1/4 tsp salt
Directions:
In a large saucepan over medium high heat add pumpkin, cider, sugar, maple syrup, vanilla, pumpkin pie spice and salt. Whisk. Bring to the boil. Reduce heat, simmer, 30-40 minutes, stirring often, until thickened.
Let cool completely before storing in an airtight container in the fridge for up to one month or the freezer for up to 3 months.
