Roasted Butternut Squash with Thyme and Goat Cheese

Ingredients:
Roasted Butternut Squash with Thyme and Goat Cheese:
2 lb butternut squash carrots
2 Tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1 tsp fresh thyme, minced
1/4 cup goat cheese, crumbled
1/2 tsp coarse salt
Directions:
Preheat oven 400F/200C. Line two baking trays with baking paper.
Peel squash, cut in half, take out seeds and slices 1/8-inch thick. Arrange squash on the prepared tray. Drizzle with olive oil, salt, and pepper. Roast, 20-30 minutes, until soft and browned. Place roasted squash on to a platter. Scatter with fresh thyme, goat cheese, and coarse salt.
