Spiced Fig Chutney

Serves: Twelve | Prep: 10 min | Cook: 20 min

Ingredients:

Spiced Fig Chutney:
1 lb fresh figs, stems removed and chopped
1 apple, peeled, cored and chopped
1/2 cup balsamic vinegar
1/3 cup light brown sugar
1/4 cup raisins
1 Tbsp freshly squeezed lemon juice
1 tsp fresh ginger, grated
1 cinnamon stick
1/4 tsp ground cloves

Directions:
In a saucepan add figs, apples, balsamic vinegar, brown sugar, raisins, lemon juice, ginger, cinnamon stick, and ground cloves. Place over medium heat. Stirring often, until the sugar dissolves and comes to the boil. Reduce heat to low and simmer for 20-30 minutes. Remove from the heat, remove the cinnamon stick and discard. Let cool and store in an airtight container in the refrigerator for up to 4 weeks.
