Spinach Blinis with Smoked Salmon

Serves: Ten | Prep: 20 min | Cook: 15 min

Ingredients:

Spinach Blinis:
1/3 cup frozen spinach, thawed and drained
1 egg
1 cup milk
2/3 cup all-purpose flour
1/3 cup whole meal flour
1/2 tsp baking powder
1/2 tsp salt
olive oil
1/2 lb smoked salmon, sliced
1/2 cup creme fraiche
1 Tbsp freshly squeezed lemon juice
fresh chives

Directions:
Firstly, squeeze out any excess water from the spinach.

In a blender add spinach, milk, and eggs. Blend until smooth.

In a mixing bowl combine both flours, baking powder and salt. Add in the wet ingredients and mix, just until combined. Let sit, for 10 minutes.

In a bowl mix crème fraiche and lemon juice together, set aside.

In a skillet over medium heat, coat the bottom with olive oil, once shimmering add batter, using a small ice cream scoop. Once bubbles appear on the top of the blinis, flip and cook, about 2-3 minutes each side. Continue until all the batter is used, adding more oil to the pan as needed. Top each blinis with smoked salmon. A dollop of the crème fraiche mixture and garnish with fresh chives.
