Buttered Salmon Sheet Pan

Serves: Four | Prep: 15 min | Cook: 30 min

Ingredients:

Buttered Salmon Sheet Pan:
1 lb baby potatoes, halved
1 Tbsp olive oil
1 tsp salt, divided
1/2 tsp pepper, divided
1 1/2 lbs (4-5) salmon fillets
1/2 lb asparagus, trimmed
1 lemon, sliced
1 lemon, juiced
1/4 cup white wine
1/4 cup butter, melted
4 garlic cloves, minced
2 Tbsp fresh parsley, chopped
1/2 tsp paprika

Directions:
Preheat oven 400F/200C.

Place halved potatoes onto a sheet pan. Coat with olive oil, 1/2 tsp salt and 1/4 tsp pepper. Roast, 15 minutes, until potatoes are just starting to soften and brown.

Arrange salmon, asparagus and lemon slices among the softened potatoes.

In a bowl whisk butter, garlic, parsley, wine, lemon juice, paprika, remaining 1/2 tsp salt and 1/4 tsp pepper together. Pour mixture over arranged salmon and vegetables. Cook, 12-15 minutes, until the salmon is cooked through.
